Vada Curry

Ingredients

Vada :
  1. Channa Dal - 200 gms
  2. Onion - 3 tsp
  3. Garlic - 1
  4. Ginger - 1/4 tsp(chopped)
  5. Green chilli - 1
  6. Cinnamon - a piece
  7. Clove - 1
  8. asafoetida - a pinch
  9. Cumin powder - 1/4 tsp
  10. Fennel Seeds - 1/4 tsp
  11. Curry leaves - as needed (chopped)
  12. Salt - 1/4 tsp
Curry
  1. Clove - 2
  2. Bay leaf - 1
  3. Cinnamon - 1 stick(small)
  4. Onion - 1(chopped)
  5. Tomato - 2(chopped)
  6. Green chillies - 3
  7. Ginger - 1/4 tsp
  8. Garlic - 2
  9. Coriander powder - 1 tsp
  10. Turmeric powder - 1/4 tsp
  11. Chilli powder - 1/2 tsp
  12. Salt - as needed
  13. Curry leaves - as needed
  14. Seasoning items
  15. Mustard seeds - 1/4 tsp
  16. Cumin seeds - 1/4 tsp

Method
  1. Grind the vada mixture coarsely
  2. Make small balls of the grinded mixture and spread it in idli pan
  3. Heat the mixture in idli pan for 10 mts
  4. Heat oil in a pan and add seasoning items
  5. Add clove, cinnamon, bay leaf and saute for 2-3 mts
  6. Add onions and saute the mixture in medium flame till the onion glazes at you
  7. Add turmeric and salt to the mixture and boil for 2-3 mts
  8. Add the chopped tomatoes and wait till the tomato gets pureed.
  9. Scramble the vada mixture in idli pan
  10. Remove the heated mixture from idli pan and scramble the vada balls on the boiling mixtuer..
  11. Boil till the mixture becomes thick

Vada curry goes very well with south Indian dishes like Idli, Dosa, Aapam, Pongal etc...one curry fits for all
