Ingredients
No of persons - 3
- Basmati rice - 3 cups
- Spinach - 1 bag
- Corn - 2
- Green chillies - 3
- Onion - 1(finely chopped)
- Turmeric powder - 1/4 tsp
- Garam/Biriyani masala powder - 1 tsp
- Lemon juice - 1 tsp
- Oil - 3 tsp
- Seasoning items
- Cumin seeds - 1/4 tsp
- Bay leaf - 2-3
- Curry leaves - 3-4
- Garnish - Coriander leaves
- Salt - to taste
- Boil basmati rice with salt in a rice cooker(1:2 rice:water ratio). We prefer to add salt along with the rice instead of the adding it in the frying mixture since salt mix evenly with the rice.
- In the meantime, grind spinach in a blender and keep it aside
- Boil corn in a microwave for 5 mts.
- Heat oil in a pan and add the seasoning items
- When it splutters, add green chillies and chopped onions
- Add turmeric powder and masala powder when the onion is completely fried and turns golden brown
- Add the spinach paste and stir the mixture well
- Saute the mixture for few mts(till spinach is completely cooked, usually it takes around 10 mts)
- Add the boiled corn and make sure it is mixed thoroughly with the spinach
- Saute the mixture for few mts again, add it to the boiled rice and mix it thoroughly with the rice.
- Garnish with coriander leaves
